Threw together this light chicken salad for a quick grab-n-go lunch...
I cheated and grabbed already shredded chicken from the my local deli, then I tossed with dried cranberries, green onions, chopped celery, bacon and a little bit of diced yellow onion. For the dressing I mixed mayonnaise, lemon juice, honey, salt, garlic powder, black pepper and a tiny bit of onion powder, mixed together and poured dressing over chicken. To build pita sandwich, I stuffed with green leafy lettuce, shredded cheese and topped with the chicken salad. Yum and I hope you enjoy..(P.S. I'll share the pita bread recipe in a later post)
