3 Large Eggs
2 1/2 Cups all Purpose Flour
1 Tbsp Olive Oil
1tsp Kosher Salt
1 Tbsp Water
Add everything to the bowl of your stand mixer and give a good mix. Attach the dough hook and mix on low until the dough forms into a ball (you may need to add more flour or water) once it reaches the right consistency, form into a disk and wrap tightly into a piece of plastic wrap. Let rest for 30 mins or up to 2 hours.
Once ready, flour your working surface and cut into four equal parts. Attached your pasta sheet maker and set it to the # 1 roller setting, take one piece of your dough and flatten into a rectangular shape adding flour to both sides, turn on the mixer to speed 2 and run the pasta dough through the pasta sheet roller, fold the dough in half and run it through again, I do this several time. Adding a little more flour on each side again, I change setting to # 2 and pass the pasta through the sheet roller. I do this twice and then twice each on #3 and then # 4. Repeat until you have all your pasta sheets ready and give them all another good dusting of flour on both sides.
Change the attachment to your spaghetti or fettuccine cutter and turn on to speed 2. Run the pasta sheet through and with one your hand, hold on to the pasta as it comes through the cutter. I wind it around my hand to create a nest. Allow pasta to dry for a few minutes before boiling, it only needs 3 to 7 minutes to boil.
